  • 1/2 cup or more of parsley

Instructions

  1. Dump those sunflower seeds into your food processor. Pulse a few times to break them up.
  2. Let it run for a minute until everything looks crumbly. At this point it looks like it’ll never become butter but TRUST THE PROCESS.
  3. With the machine still running, pour in the olive oil. It’s like magic how it starts to come together!
  4. Juice those limes right in there and throw in the zest too. I always inhale deeply at this point because that citrus smell is like instant happiness.
  5. Toss in your garlic cloves. Don’t even bother chopping them – the food processor is already doing the work, might as well let it handle the garlic too.
  6. Add salt and start slowly adding water until you get the consistency you want. Some days I want it super spreadable, some days more dippable.
  7. Throw in the parsley and pulse just enough to mix it in. Don’t pulverize it completely – those green flecks make it look so pretty!
