But last week, I had this total flashback to this incredible avocado smoothie I was having every day at this organic café in Thailand.

This smoothie is super easy to make and you need very few ingredients:
Ingredients
These will make you two large glasses of avocado smoothie.
- 2 medium-seized avocados or 1 and a half large ripe avocados, pitted and peeled
- 4-5 tablespoons honey (adjust to taste)
- 2 cups ice cubes
- Juice from 3-4 limes
- ½ cup cold water (optional, for blending)
- Mint leaves for garnish (optional)
Step-by-Step Instructions
- Cut your avocado in half, remove the pit, and scoop out all that gorgeous green flesh into your blender.
- Add the honey, ice cubes, a little bit of water, and the juice from 2 limes to start. Do not skip the ice cubes, really, or this will feel like an avocado sauce instead of an amazing smoothie.
- Blend everything until it’s super smooth and creamy.
- Taste your creation! Now’s the time to add more lime juice or honey if you need it.
- If your smoothie is too thick with avocado add cold water and keep blending it.
- Pour into glasses and garnish with a lime wedge or mint leaf to make it look pretty. Or just drink it.

This smoothie is definitely best enjoyed immediately after making it.
I’ve tried storing leftovers, and it turns this sad brownish color that looks like something my cat Milo might have coughed up.
If you absolutely must store it, keep it in an airtight container in the fridge. But not for longer than 24 hours (or you will not want to drink it). Give it a good stir or a quick blitz in the blender before drinking.
And a word of warning from someone who learned the hard way: don’t try freezing this! When thawed, it separates into this weird watery mess that no amount of re-blending can fix.
